the other day the weather took a sharp turn: it had been in the 90's for a few days then all of a sudden we wake up do a 60 degree day! a rainy, breezy, very chilly 60 degree day.
i decided to act like old folks and make some chicken soup.
i even further decided to act like a real granolamama and cook some chicken soup for my granolababy.
my first real time cooking for the li'l tike.
baby's soup turned out pretty good, surprisingly! i tried to keep it basic but still give him a tasty soup. it was just tiny pieces of chicken, tiny pieces of carrots, tiny pieces of celery, corn, peas, a little salt, a dash of garlic powder and a little extra virgin olive oil (to saute veggies and chicken). add water and simmer for an amazingly long time. terribly long. basically until the chicken and veggies are mashable with your tongue. simmer it really, really long.
i added some organic brown rice cereal to it when i served it to him and he really liked it! our soup was of course heavier on the spices and herbs; with some rosemary, thyme, smoked paprika, fresh black pepper, minced garlic and a bit more salt. then i added spinach fusilli pasta once boiling and turned down to simmer until the pasta was cooked.
i can officially cook for my whole family. i wonder if i'll be expected to do it all the time.
